The Lágrimas Negras restaurant has been designed by the French interior designer Christian Liaigre and is situated on the ground floor of the Silken Puerta América. It gastronomy has been renewed by the director Raúl Cabrera and the chef Juan Carlos Delle Vedove. The latter assumes the functions of head chef, while Cabrera assumes the management role of Silken's flagship restaurant.
The menu of the Lágrimas Negras is inspired by the dishes created by Martín Berasategui, with whom Cabrera and Delle Vedove have worked in the Lasarte and the Kursaal, with three and one Michelin stars, respectively. Each proposal is accompanied by the date on which the renowned Basque chef, who has seven Michelin stars, created each of the dishes. The menu places importance on the product and their season with dishes from the Lasarte but updated for the Lágrimas Negras restaurant.
Cuisine diners can personalize with the recommendation of a perfect wine for each dish, selected from the wine cellar at the Lágrimas Negras, given the Wine Spectator award on many occasions. And all this combined with the excellence and quality service given to diners by the maître, Rafael Lomas.

Designed by Christian Liaigre, the MAD Restaurant recreates an atmosphere full of light and colour to organize private lunches or dinners. The room is located on the mezzanine floor of the hotel and has a capacity for up to 120 diners.

It serves an extensive buffet breakfast every morning, consisting of a wide selection of Iberian cold meats, vegetables, eggs, sausages, cheeses, fruit, juices, yogurt, natural milkshakes, jams and handmade buns and pastries.
Sundays are special at the MAD restaurant thanks to its lunches and dinners.

It is noticed as soon as you enter the hotel thanks to the huge glass entrance doors. One of the wonders of this bar, designed by the Australian architect Marc Newson, is its height, which is accentuated by 400 aluminium sections of a minimum thickness of almost seven metres high, separated from each other by five centimetres. But its great value lies in its bar, a single piece of white Statuario Venato marble that is 8.25 metres long whose dimensions and weight meant that it was the first feature to be installed in the hotel, even before the facade.
During the day, a must for executives. Moving meetings here, enjoying a relaxed conversation or a coffee is always effective. In the evenings, a cosmopolitan and elegant air spreads through the bar, which vibrates with DJ sessions and cocktail delights.
