Raúl Cabrera is also the director of the ESAB (Silken Food and Beverages School), advised by the renowned chef Martín Berasategui, holder of seven Michelin stars. As one of Martín's special pupils, Cabrera has developed almost all his professional career under this Maestro and, as Head Chef, he obtained the first Michelin star for the Kursaal Martín Berasategui restaurant.
Our Head Chef, Juan Carlos Delle Vedove, has also worked with Berasategui in Lasarte and the Kursaal, as head of desserts. He has trained with chefs such as Massimo Botura, Carlo Cracco, Mauro Uliassi and Andrea Berton at the renowned Italian restaurants La Casa Degli Spiriti in Verona (one Michelin star) and Al Ferrarut (one Michelin star) in Rivignano, Italy.
