Three names head up the experience of dining in the restaurant Lágrimas Negras: Iván Sáez,the chef in charge of the kitchen for ever aware of seasonal flavours, Juan Antonio Herrero, who selects the best wines and liqueurs; and Rafael Lomas, who looks after the service to the lastdetail.


Iván Sáez | Chef

Iván Sáez took over the burners of the restaurant Lágrimas Negras to continue with his alreadylong tradition in seasonal dishes.

Sáez has built up his career working for the best restaurants in French Bretaña and Paris. In Spain he has worked with Martín Berastegui, Andoni Luis Aduriz and Fernando Pérez Arellano.

Included in his professional successes should be noted that he was awarded the “BipGourmand”, a prize awarded by the Michellin Guide 2009, while he headed up the restaurant Zorzal in Madrid.

Juan Antonio Herrero | Sumiller

Juan Antonio Herrero is not only the head sumiller of the restaurant Lágrimas Negras, but is also the principal beverages adviser for the whole group of Silken Hotels.

Among the many awards that he has received during his excellent career, a special mention should be given to the Prize Nariz de Oro of London in 2004 and the Honoray Mention in the Premio Nacional de Gastronomía in 2005.

His wines list at Lágrimas Negras has earned him on repeated occasions the Best of Award of Excellence Wine Spectator in 2008, 2009, 2010 and 2011.

Rafael Lomas | Maitre

The clients and the service are his obsession. Rafael Lomas is the first maitre of the Restaurant Lágrimas Negras; and an addict in service techniques and elaboration in front of the client.

With a dense curriculum which includes his time at the Ritz, the Palace, the Villamagna or his collaboration with Luis Irizar; Lomas stands out for his nine years as First Maitre d’ Hotel of the Restuarant La Terraza del Casino de Madrid, during which time they were awarded two Michelin Guide stars, among other awards.
